Facility Encourages Baking and Pastry Arts Students to Explore Latin Flavors and Cuisines

SAN ANTONIO and CANTON, Mass., Oct. 18 /PRNewswire/ -- The Culinary Institute of America (CIA) and Dunkin' Donuts, America's all-day, everyday stop for coffee and baked goods, recently dedicated the nation's first Dunkin' Donuts Bakeshop, located on the CIA's newly expanded campus in San Antonio, Texas.  As part of a $900,000 pledge from Dunkin' Brands to become a founding donor of the CIA's "El Sueno" initiative, the company's support will assist the baking and pastry faculty at the world's premier culinary college to educate students and industry professionals about traditional Latin American baked goods, which are still unfamiliar to many in North America.

During the official opening ceremony on October 9, Dunkin' Brands Chief Creative and Innovation Officer Joe Scafido and Executive Chef Stan Frankenthaler joined CIA President Dr. Tim Ryan and San Antonio campus Managing Director David Kellaway for a festive celebration that featured a variety of food-themed events, including a healthy snack competition for local high school students and culinary demonstrations by renowned chefs.

The Dunkin' Donuts Bakeshop, which is located on the second floor of the new facility, will provide the CIA's students with the basic fundamentals of baking and pastry arts and offer the extensive hands-on technical skills necessary for success in the foodservice industry.  The Bakeshop is fully equipped with state-of-the-art bakery ovens, commercial mixers, baking equipment, hand tools and other supplies required to prepare an array of baked goods from donuts, muffins, croissants and all types of breads, desserts, pastries and confections.  The kitchen also features a chocolate tempering area designed for dipping, making truffles and creating decor for cakes.  From learning the classic skills and the fine art of baking pastry, to commercial baking production and running the front counter at the new bakery cafe, students will be prepared to work in a variety of settings, including bakeries, cafes, and quick service, casual, and gourmet restaurants.

Led by Executive Chef Stan Frankenthaler, a 1984 CIA graduate, the Dunkin' Brands culinary team is responsible for developing all of the new products for Dunkin' Donuts, including beverages, savory and sweet items, that are served in more than 9,000 restaurants worldwide.

ELLIE KRIEGER'S BARILLA WHOLE GRAIN SPAGHETTI WITH ROASTED TOMATO AND ALMOND PESTO

 INGREDIENTS:
 1 box BARILLA Whole Grain Spaghetti
 Olive oil cooking spray
 1-1/3 pounds ripe plum tomatoes, cored, seeded, and quartered (about 6
  medium)
 1/3 cup blanched sliced almonds
 1 medium clove of garlic
 1/3 cup lightly packed fresh basil leaves, plus more for garnish
 1 teaspoon red wine vinegar
 1/4 teaspoon crushed red pepper flakes
 3 tablespoons extra-virgin olive oil
 1/4 cup freshly grated Parmigiano cheese
 1/4 teaspoon salt, plus more to taste


 DIRECTIONS:
 -- PREHEAT the oven to 400 degrees. Spray a baking tray with cooking
   spray. Place the tomatoes on the tray and roast in the oven for 30
   minutes, until they are soft and slightly charred.
 -- TOAST the almonds in a medium-size dry skillet, over medium-high heat.
   Stir frequently, until almonds are golden and fragrant, about 3 - 4
   minutes.
 -- TRANSFER the almonds to a food processor. Add the garlic and process
   until they are finely ground. ADD the roasted tomatoes, basil,

Cheeseburger Quesadilla
Serves 1
Ingredients:
1 large La Tortilla Factory Smart & Delicious Low Carb/High Fiber Tortilla
1 Boca Original Meatless Burger, thawed
1 slice fat-free American cheese, chopped
1 tablespoon chopped onion
1 tablespoon chopped pickles
Optional ingredients: salt, black pepper, garlic powder
Optional topping: ketchup
 
Directions:
Preheat oven to 350 degrees.
Cut burger into small bite-sized pieces. Bring a pan sprayed with nonstick spray to medium heat on the stove. Add onion and burger pieces. Cook for 2 to 3 minutes, until onion is soft. Season mixture to taste with optional ingredients, if you like.
 
Spray a medium-large baking sheet lightly with nonstick spray. Lay tortilla flat on the sheet and evenly top with the cheese pieces. Bake in the oven for about 2 minutes, until cheese has melted slightly. Leave oven on. Spread burger mixture over one half of the tortilla. Top with pickles and fold tortilla in half, pressing down lightly with a spatula to seal.
 
Bake in the oven for another 3 to 5 minutes, until tortilla edges are slightly brown. Remove from the oven and cut into triangles. Top or serve with ketchup, if you like. Yum!

Asian Rotisserie Chicken Salad Wrap
Serves 2
 
2 La Tortilla Factory Extra Virgin Olive Oil SoftWraps
3 ½ oz shredded Rotisserie Chicken, breast meat only
¼ c shredded cabbage
¼ c shredded carrots
2 Tbsp coarsely chopped green onion
2 ½ Tbsp coarsely chopped cilantro
4 Tbsp Reduced Fat Asian Toasted Sesame Dressing (or any other favorite Asian dressing)
 
1.     In a bowl, combine the chicken, cabbage, carrot, green onion and cilantro and toss with dressing to mix well.
2.     Place half of the chicken salad on a tortilla and roll away from you into a wrap.
3.     Place the remaining mixture in the second tortilla and roll into a wrap.
 
Nutrition Analysis per serving: Calories: 250; Total Fat: 6g; Carbohydrate: 39g; Dietary Fiber: 10g; Protein: 18g
